Some friends and I used to try and have dinner together once every two weeks. “Once every two weeks” turned into once every one or two months–if we’re diligent and lucky. Nowadays, it seems like it’s closer to once a year. Between big people jobs, significant others, dogs, houses, and babies; it’s just hard to make it happen. But we try. We all three know we’re happier in our lives after one of our dinner-and-a-movie nights where we can share our stories, frustrations, victories, and lessons. And because these dinners often get few and far between, we always like to make them special. That’s where these Pear, Prosciutto, and Blue Cheese Appetizers started….

Best Valentine’s Naturally Gluten Free Peanut Butter Forgotten Kisses
I used to be a huge fan of The O.C. I have no idea whether this is the actual name for these cookies. But in the Valentine’s Day episode of (I think) the first season (maybe the second), Kirsten calls them “Forgotten Kisses.” Thus, they will forever be known in my house (and on THD) as “Forgotten Kisses.”
Because the month is February is all about Valentine’s, chocolate, and kisses; what better way to celebrate than to make some of these delicious, kiss-themed, gluten free peanut butter cookies???…
Lemon Strawberry Shortcake with DoTerra Lemon Essential Oil
I don’t think I could ever feel it was truly spring or summer without at least one meal which included strawberry shortcake. I love all kinds of shortcakes too–pound cake, traditional biscuits, even angel food. But this lemon strawberry shortcake gives a traditional shortcake just enough tang to feel like a gourmet indulgence. Which is funny, because as far as cakes go (especially pound cake), it’s really pretty healthy….
