I don’t think I could ever feel it was truly spring or summer without at least one meal which included strawberry shortcake. I love all kinds of shortcakes too–pound cake, traditional biscuits, even angel food. But this lemon strawberry shortcake gives a traditional shortcake just enough tang to feel like a gourmet indulgence. Which is funny, because as far as cakes go (especially pound cake), it’s really pretty healthy.
As I’m sure has not gone unnoticed, I have recently started getting into essential oils, and, most specifically, DoTerra. One of the reasons DoTerra is my favorite is because it’s therapeutic grade and most of the oils are safe for consumption (though ALWAYS make sure to check with your DoTerra rep before consuming anything new). There is an indication that there are lots of health benefits to essential oils. So what better way to reap those benefits than to put the oils in our food–and most specifically, our sweets?! Might as well give our semi-unhealthy treats a healthier beneficial twist.
As far as taste goes, these oils have wonderful potent flavors. It doesn’t take much. And what you get when adding these oils to your food is TRUE flavors.
In addition to the Lemon Essential Oil, I also often substitute the regular oil for Big Horn Olive Oil. I have to say, I’ll never eat it any other way because the flavor is taken over. The. Top.
The Lemon Oil in this cake gives it an extra boost of true lemon flavor without the bitter bite of rind and without the chemicals of a fake extract. As far as I’m concerned, there’s not much more you can ask for than that. As for the good olive oil, it lends a grassy flavor to the cake that tempers the tang of the lemon and gives your whole mouth a umami of different flavors.
I’m a firm believer that food should be nourishment, medicine, AND pleasure. And what we’ve started doing to it is a bit scary when it comes to all the processing. So for flavors, let’s go back to basics. I’ll make sure to get lots more DoTerra recipes on here so we can go back to a time where flavors came from nature.

- 1½ Cups Flour
- ½ teaspoon Baking Soda
- ½ teaspoon Baking Powder
- ¼ teaspoon Seasalt
- 3 Eggs
- 1 Cup Sugar
- 2 Tablespoons Butter, softened
- 1 teaspoon Vanilla Extract
- 10 Drops Lemon DoTerra Essential Oil
- ⅓ Cup Lemon Juice
- ½ Cup Oil
- 1 lb. Organic Strawberries
- Whipped Cream
- Preheat oven to 350 degrees.
- Mix all wet ingredients in a stand mixer with the paddle attachment.
- Add all dry ingredients in and mix until lumps are gone.
- Grease 9 X 5" pan.
- Wash and slice all Strawberries.
- Bake 45 minutes or until toothpick comes out clean.
- Slice cake, add Berries and Cream.
