Hello Hungry Daters! And welcome to another “Meatless” Monday. I have always had difficulties eating vegetables, but I have to admit, it’s much much easier for me in the Summer, and that is thanks to the grill. Though I don’t always love the taste of vegetables, I do love the taste of a grill fire, and it seems to make everything better. This isn’t really a recipe so much as a form of cooking. When May comes around, I always start looking for sweet corn. I know it’s still a bit early, and in May and sometimes June, it’s always a crap shoot as to whether the kernels are going to be extra thick because I’ve purchased them a smidge too early. But honestly, even then, I will consume fresh corn in several different ways, often at an alarming rate–tough kernels be damned! And now, we’re definitely in prime corn season for at least two more months.
Grilled Corn on the Cob
Though I like corn in many different ways, I think grilled is my favorite both for the sake of ease as well as flavor. I honestly feel the best way to cook corn on the cobb on the grill is inside the husk. If you keep it in the husk, the natural humidity in the corn sortof steams it from the inside out. You can take the silks out first and then replace the husk, but honestly they’re actually pretty easy to get off when they’re already cooked. So today when you’re at the store, look at the corn, think of me, pick out a few choice ears, and put them on the grill!!! Happy Grilling!
Recipe
Turn the grill on to high or medium high.
Put full covered corn directly on the grill (if you’re cooking something else and want to get the corn started, feel free to put it on the top grate while cooking something else. However, it should be at least finished on the actual grill to make sure it’s done.)
Turn corn several times, trying to get every side of the surface facing the fire for at least a couple minutes.
On a medium high, it should probably be in the grill for 25 min. For high, it’ll be more like 15-20 min. You can open the husk to check when you think it’s done.
Dress it up with all your favorite toppings–smoked paprika and lime; butter and garlic salt; olive oil and pepper… The sky’s the limit!!!
